The purple corn we use in our mash bill gives our bourbon a much sweeter profile than most others. Purple corn gives a flavor profile of fruit and a bit of almond. We throw in some rye to add a bit of spice, and some malt to round out the flavor. Using a higher percentage of corn also brings those sweet notes to the surface making this the perfect end-of-day sipper! Our purple corn bourbon tastes amazing and different from any other bourbon you've tried.
Didymium is a violet-colored glass that has the property of being able to filter out the frequency of light given off by glass as it is heated in an oxidizing atmosphere. Glassblowers use didymium glasses to filter out this light and protect their eyes. Our Didymium bourbon helps filter out the rest of the shelf so you get the best in flavor and quality.
Bourbon's flavor is limitless. We have used our first few batches to explore that flavor and find the perfect staple to show the uniqueness of our purple corn. Make sure to stay tuned and try them all!

The Gaffer is the head glassblower. They are the visionary that leads a project to make a piece come to life. This collection will be our yearly limited edition release. This will be where we really push the bounds of flavor and try out new and exciting things.
The first batch in our Gaffer Collection will be distilled in March 2025. In this first special project, we will be introducing 2% of Amaranth into our mash bill. The mash bill will be 76% purple corn, 15% rye, 7% malt, and 2% Amaranth. Amaranth is similar to wheat, and we hope it brings more dark berries and rich butterscotch to the palate. This batch will be aged in a 15-gallon barrel for at least 2 years.
