The purple corn we incorporate into our mash bill enhances our bourbon with a distinctly sweeter profile compared to most others. This unique purple corn contributes flavors reminiscent of dark red fruits like black cherry, currant, and plum, accented by a hint of toasted almond. We also add some rye for a touch of spice and a bit of malt to beautifully round out the flavor. By using a higher percentage of corn, we bring those delightful sweet notes to the forefront, making this bourbon the perfect choice for an end-of-day sipper! Didymium is a violet-colored glass known for its ability to filter out specific frequencies of light emitted by glass when heated in an oxidizing atmosphere. Glassblowers utilize didymium glasses to effectively shield their eyes from this light. Our Didymium bourbon enhances your experience by filtering out the rest of the shelf, ensuring you enjoy the best in flavor and quality.

The Gaffer is the head glassblower, serving as the visionary who leads a project to bring a piece to life. This collection will be our annual limited edition release, where we will truly explore the boundaries of flavor and experiment with new and exciting elements.
The inaugural batch in our Gaffer Collection is set to be distilled in May 2025. In this special project, we will introduce 20% of Amaranth into our mash bill, which will consist of 63% purple corn, 10% rye, 7% malt, and 20% Amaranth. Amaranth, which is akin to wheat, is expected to enhance the tasting experience by adding rich notes of dark berries and butterscotch to the palate. This batch will be aged in a 15-gallon barrel for a minimum of 2 years.
